Hezekiah, age 4

You seriously need to try this recipe. It is so easy, and so yummy. Thirteen out of fifteen people (in my house anyway) give this recipe two thumbs up.

In fact, Hezekiah likes it so much, the first time we had it he asked, oh so politely…

“Mama, may I please have some more Choompa-Loompa?”

So, here it goes…

Add the following to your crockpot:

2 pounds of dry pinto beans (no need to soak, just rinse)

1 onion (I use green onions or dried onions)

3 cloves of garlic

24 ounce can chopped green chilies

1 1/2 tablespoons chili powder

4 pounds pork roast (with our without the bone)

1 1/2 teaspoons of oregano

1 1/2 tablespoons of salt

Cover with water and simmer until beans are tender and meat falls of bone. Remove bone, return meat to crockpot. This takes about 5 hours in my crockpot.

Serve over tortilla chips (unless you’re Liberian, then you eat it over rice). Add any toppings that you would to tacos: salsa, sour cream, cheese, olives, guacamole, etc.

This is so easy, healthy and affordable. This meal cost me $13.39 to feed my family of 15! Here is the price breakdown:

2 pounds of pinto beans (purchased in bulk) $1.04

green chilies $1.25

pork roast, purchased for $1.79 pound for a total of $4.24

other spices, $1.00

for a total of: $ 7.53

One pot of rice cost me $1.26, I bought a bag of chips for $1.46, we used about  $1.50 worth of cheese, old lettuce from my fridge .89, and sour cream .75.

Several items were purchased on sale (the pork and chips), the rest purchased in bulk (including the green chilies. I buy the biggest can I can, and freeze it in baggies).

I have been working in figuring out an actual price on some of our dinners. This helps me in my planning. I have been thrilled to see how little some of our favorite meals cost to make. It inspires me to keep cooking from scratch, and stocking up at sales.
