Apollo 15 months old. By the way, this is the same shirt he wore in his seven month pictures, but he has finally (sort of) outgrown it so off to the consignment store it goes.
Back in the day I used to post weekly meal plans here on my blog. In fact, I have "weekly meal plans" catagory. And then one day I stopped. Mainly because I stopped making meal plans. Denial, I suppose…but the reality is my chidlren insist on eating day after day…so I am going to make an effort to post our weekly meal plans here again.
Monday– cornmeal pancakes and honey butter
sandwiches and fruit
pulled pork sandwiches/coleslaw/potato wedges
Tuesday– oatmeal
pizza crescents (our crescent rolls filled with pepperoni, olives and cheese)
spaghetti, foccacia bread, salad
Wedensday– eggs and tortillas
bean burritoes
chicken (maybe soup, maybe cooked in the crockpot)
Thursday- oatmeal
mac and cheese (homemade)
pizza
Friday– muffins
sandwiches/fruit
I guess I got stuck…

My daughter gave me her meal plan the last few wks. We eat a lot of rice, burritos, spaghetti and homemade pizza. I mean she is 9! she is our resident cook while I remodel the house. she does good work.

I have to have a meal plan. Otherwise my mind is blank when it comes to cooking dinner. 🙂
Here is our dinner plan for the next two weeks: roast chicken with mashed potatoes, taco salad, chicken alfredo, mac & tom, grilled cheese sandwiches with soup, santa fe chicken, clam chowder with rolls, ribs with baked potatoes, chicken and rice soup, baked potato with chili, spaghetti with cheesy bread. (We’re going out of town after that so it’s not a full two weeks.)
I’ll share my santa fe chicken recipe because it’s a hit around here and it’s super easy. I just put chicken, salsa, corn, and black beans into the crock pot on low. Just before serving, I add cream cheese and let it melt in. (You could easily omit the cream cheese for dairy-free eaters and then add it in for everyone else.) I serve it over rice and top it with avacado, cheese, sour cream, etc.

I’m glad Meal Plans are back! It was always one of my favorite features. I have your Chulupa on my plan this week. I only plan dinners, so I may not be of much help for ideas.
Best Browned Beef Stew, possibly with biscuits
Chulupa or Chipotle Roast, served as tacos or bowls (husband’s choice)
Breakfast for Dinner: bacon, eggs, friend potatoes, etc.
Baked Chicken, zucchini and carrot ribbons, green salad with homemade dressings
Meatloaf, mixed veggies, sweet potato fries

Awesome! My mum has started writing a meal plan on the whiteboard in the kitchen each week. Not beacause she can’t decide what to cook but because she gets sick of everyone asking what’s for dinner 🙂
Mum has also started writing a grocery list as we run out of things, less impulse buying and we don’t forget as many things on the fortnightly shop. Instead of rewriting the list in a notebook when we go out, mum just takes a photo of it on her iPhone. My brother thought it would be funny to write ‘food’ on the grocery list last week, mum had a good laugh.

I got the books ” Cook This, Not That” for healthier ideas, and the best parts of those books are the cooking matrix pages for slow cooker meals, pizza, pasta, skewers, etc. It’s made meal prep so much easier. I typed out the matrix plans and put them on the fridge. They’ve made me a much better cook & keep me from getting into too deep of a rut with meals.
